European deli meats are still not a common sight in Metro Manila. Usually imported, and therefore expensive, they are carried only by large supermarket chains and a few deli shops located in upscale malls or neighborhoods. Earle's Delicatessen is unusual in that it makes its own sausages and deli meats. This is from their branch at The Columns Ayala. Owned by a brother and sister tandem, Earle's has a German master sausage-maker as a consultant who comes here twice a year to teach their staff how to make deli meats authentically. And when you buy any of their sausages and hams, they will ask how you want it cut: thin, thick or shredded. It was the first time I encountered such a thing. This Earle's has nothing to do with the UK franchise—the brother in the team just happens to be named Earle too.
Hilda, you should try some of ours! In such a small country the variety is amazing. Unfortunatelly you can have them very seldom unless you want your cholesterol much over 200! :-)))

ReplyDeleteSounds like they're pretty serious about their product. I was on Uebersee the other day, he had the most ghastly photo of a butcher shop. This is soooo lovely.

ReplyDeleteThat question about how you want the sausage cut is quite normal here, I mostly go for thick (meaning about 1mm). Our sausages are quite different from these, but I can se much stuff I'll carry home happily!

ReplyDeleteInteresting. It's amazing how much cheaper deli meats are in the US compared to Europe. My husband loves roast beef and he doesn't have to feel bad about eating his fill over here.

I am slowly turning more or less willingly into a vegetarian, but this looks really good to me! I remember the day when we discovered some Black Forrest ham in New Delhi, it was like Christmas! But yeah, having more and more problems when eating meat.
